This invisible layer is what makes farm-fresh eggs special, and it means they need to be handled a little differently than commercial eggs.
Here's everything you need to know to keep your eggs fresh and safe:
🚿 Do Not Wash Your Eggs
The most important rule: do not wash your eggs until you're ready to use them. The bloom seals the pores of the eggshell, blocking bacteria and locking in freshness. Washing removes this protective coating. Once an egg is washed, it must go straight into the refrigerator.
🌡️ Counter Storage (Unwashed Eggs)
Unwashed farm-fresh eggs can safely be kept on the counter or in a cool, dry place — away from direct sunlight and heat sources — for up to 2 weeks from your delivery date.
Important note for Florida customers: In our hot and humid climate, we recommend refrigerating your eggs sooner rather than later. Eggs kept in a kitchen that regularly hits 80°F or higher will spoil faster than the 2-week guideline.
❄️ Refrigerator Storage
Once you refrigerate your eggs, they will stay fresh for up to 2–3 months. A few tips:
- Store eggs in their original carton to protect them from absorbing odors from other foods.
- Keep the pointed end facing down — this keeps the yolk centered in the egg.
- Set your refrigerator to 40°F or below for optimal freshness.
🔄 Once Refrigerated, Keep Them Cold
Do not move eggs back and forth between the refrigerator and the counter. The temperature change causes condensation to form on the shell, which can push bacteria through the pores and into the egg.
🥚 Cracked Eggs
Always inspect your eggs before use. A cracked shell means the egg's natural barrier has been compromised. Use cracked eggs immediately or discard them — do not store them.
